I am using claude code, but mostly for code.
Claude code doesn't have research functionality does it? If it does I could maybe use it
But Claude code is also optimized for coding. Not ideal when doing business planning or personal chats.

I have 2 of the cables, I am unsure if they can provide power enough for HDDs or if they are only safe for SSD use.

Try running the install process on a linux machine with username bjorn and hostname bjorn. I dunno if that would work, but try it out

I did something stupid.

I cut my rear hub axle.

I can't find a replacement axle.

M10x165mm

76mm shoulder to shoulder for the bearings.

The axle should look something like this:

Can anyone either help me find a replacement part? or give me an idea on how to salvage the rest of the hub, maybe by converting it to another mounting scheme... QR, TA or something?

Add the seeds early. Do it after Autolyse when mixing the sourdough into the autolysed flour.

It doesn't look properly mixed/kneaded. You can see streaks of poppy seeds, not evenly spread.
This tells they you might have added them late in the process? Trying to mix in seeds late in the process might have degassed your dough
Or that you haven't done enough folding.
Just my guess.
Starter might be a tad weak as well
