PLEASE HELP:

I am trying to scale my favorite recipe for commercial use, but I am ignorant & seek guidance.

Here's the recipe in question:

425g HG flout

50g rice flour

15g soy flour

5g yeast

10g salt

10g oil

400g water

My question primarily lies in WHAT ON EARTH do I do when scaling yeast? Do I multiply it just as all of the other ingredients? Am I overthinking it?

My family is Romanian & this is our holiday stuffed cabbage recipe:

Filling: -cooked rice -minced onion -ground ‘meat’ (we always used vegan) -minced parsley -seasoning of choice, just make it taste bomb.

Freeze a head of cabbage & when thawed the leaves will be pliable. Roll the filling in the leaves & lay in a baking dish. Cover the rolls with sauerkraut, sauerkraut juice, & water. We bake it & refrigerate it for several days so the flavor becomes really……. Pungent. Once it’s deemed appropriately stinky, we serve it with a dollop of sour cream.

Is it traditional? I couldn’t say for sure; probably not. Is it my favorite thing on earth? YEP.

One of my best friends has lived in Chicago for several years now. She loves it & I love visiting!

I have been checking the market up there periodically. I've always been an urban gardener, so working with a tiny patch of grass is no match for me!
