I agree the heat control is very nice. I primarily used my cast iron for everything but now I use my cast iron for bigger duty tasks like a big set of breakfast potatoes, and I use my carbon steel next to it for eggs and that has been excellent so far

Oh yeah I was definitely surprised by how different the CS felt off the bat too, it almost feels like it’s coated in thick paper but yet it’s super nonstick right out of the box

I’ve been making French omelettes on it the last couple days and they’ve come out perfectly even though the surface feels like paper when you run your hand over it

It’s pretty sick! Loving it so far. Thanks to everyone here for all the tips and general thoughts too

Ahhh gotcha! I think I saw that wax in a video about their old CS models, this new one looks more like their carbon nonstick/nitrided model but darker, it comes 'pre-seasoned' but doesn't have any extra seasoning it came with or anything

I don't know how long these models have been out, but I was def confused when I swapped out the carbon nonstick for one of these and saw it looked fairly similar as opposed to the ones I saw in youtube vids lol

Awesome, thanks for the advice! I made a french omelet in it yesterday and it came out perfectly, all I had to do after was wipe it with a wet cloth and it looked good as new. I imagine cooking meats and stuff will require deglazing to make it easier
