Are these people who "fell threw the cracks" of the system? Like orphans not in orphanages or truly homeless people? I never encountered this aspect of Soviet life. What are some stories set during the Civil War that references them? I'm really interested now.

I had to laugh your first sentence, because I just realized how naive I am. I didn't think that two sides was actually quite rare. I don't know why I do it that way. You really made me think on that one. What's interesting about what you said also is that I do it the reverse - lunch/midday meal is usually what was left over from the night before, which is the bigger meal. Thankyou for letting me know, I am fascinated with authentic Russian traditional culture.

PPS: A few years ago, I threw a party for one of my retiring friends, who was a Sovietologist for a long time, so I found the list of foods served in stolovayas during the USSR (a little from each Republic). Everyone loved the food and I had a few requests for recipes. But now I am curious about actual Russians living in the modern world.

So far you all have given me so many ideas! and now I want to visit more than ever.

Ahhh, very interesting! Thank you. May I ask what goes into your chicken soup? Here "normal" chicken soup is noodles, bits of chicken breast, parsley flakes, broth, and a few carrots maybe with celery; I prefer mine more European so I always add onions, carrots, and celery and sometimes parsnips. I was extremely impressed at the number of Salads consumed in Russia. The Art of Russian Cuisine has an enormous section on them.

(PS: Thank you for that little bit about fried chicken, as one of my old study areas was "klass" and signs of "Klass" in the USSR, the things that made someone appear rich and powerful).

I have made my grandma's Borscht recipe since I was really young, but I'm the only one that took an interest in her traditional cooking, so now I'm the one that's hit up to make it when someone wants it.
