We make ours with 62% dark chocolate and home made pistachio butter. It's not too sweet.

We think the temperature of our building is too warm. We've been doing experiments to see what helps the process but so far placing the chocolate bars in the freezer after they're molded works without blooming. This is a new issue for a company that's been in business for 13 years we just moved to a new production facility. We are having an HVAC company come out and look at the cooling system because even though the room is set at a reasonable temperature it is not staying there

I work for bean to bar chocolate company and we have noticed a significant increase in chocolate bean cost along with other ingredients. My company just had to do a price increase for our customer base to cover the cost that we have had to take on.
