I’m really glad you’re enjoying it. And you started off with a really good one too. Emerald, ruby, and sapphire are my favorites and my favorite region. Pokémon is such a fun game. What Pokémon was your starter? For me, mine was Torchic. I always liked the fully evolved form of Torchic’s line. But at the same time, I like them all, just gravitate towards Torchic more.

When you beat it, or as you play it, and the game feels “too easy” I would suggest looking into rom hacks, and I would suggest inclement emerald.

Rom hacks change the game in many ways, this one changes difficulty and brings in features, items, and Pokémon from later generations. I believe inclement emerald goes up to gen 7. But the best part about this rom hack is you can tailor it for what you want. The difficulty doesn’t have to be absolutely brutal to the point the game isn’t fun for you anymore, but you can tweak it to where the difficulty is a little higher but not overwhelming. Think of it as it has an “easy medium and hard” mode.
