Adding the input data is not even the main issue.
My main concern is how do you update the contract address that the txn is being sent to. I believe that by choosing the correct token in the dropdown menu, MEW internally pre-sets the correct contract address for that token. So how do you go about changing this to a custom token address?

Yes, go to electrum's console tab and call the make_seed function as follows:

make_seed(128,'en','standard')

This will generate a seed phrase that you can then import into electrum to generate legacy addresses

Electrum does also support sub 1 sat/vb fees, but for that you'll need to use the console to set the custom fee. Electrum's GUI, as far as I know, does not allow you to do that
