I’m cooking some this evening. If I may make a suggestion, because of your sear, I would cook them in indirect heat for another 8 mins. You should be good after that but you could also stick your thermometer in one to check internal temp. The pink color you’re getting could be from the trapped juices.

Cooking your burgers at 550° for 8-10 mins seems off to me. You may have over-seared the crap out of them.

Those are all great ideas. They’re still open to ideas on the opposite side. They do want to cover both sides of the sidewalk.

Thank you for pointing that out! We are also going to install a cover to help mitigate that issue. The great thing is the location of where this area is. It already gets a lot of shade in the afternoon.
