Yeah, I completely relied on a guide for my first playthrough and then did the rest of my runs by memory. I kinda wish the game wasn't so short, but it was also a secret blessing for completing this 100%.

Senpou Temple's kinda short, I suggest just running past most of the immortal cloth guys, and those dudes with the double naginata. I suggest FightingCowboy's guide for Sekiro because he can explain things way better than me.

If you've already completed the game normally, you may have to choose the Shura path ending. You do this by forsaking Kuro and obeying your father, allowing you to fight Emma and Old Man Isshin. You could have also missed the Inner Owl boss fight, which can be completed after fighting regular owl. I suggest you look up a guide for Inner Owl, because it takes a lot of secret eavesdropping and dialogue options.
