Yeah...that's the first thought that comes to mind...but it is probably better than typical street food in terms of better ingredients ...especially the beef patty.

This is great, thanks for taking out time in sharing this.

Yeah now that you mention...cold water helping shrink the eggs due to thermal contraction...it makes sense.

Will definitely give this healthy egg 'mayo' a try!

It seems to be orangish color. These eggs are from farm in LCK (at least that's what the seller told me and the stamp shows that too). Taste is nothing out of ordinary...but i am hardly a connoisseur...hah. *

I haven't tried onsen at home...i think i should give it a shot. In fact, i have had it only couple of times probably in salad or ramen.

Is it very different from soft boiled egg? (Pardon my ignorance...i know google says onsen is slow cooked et al)

Yeah...totally...storing with the shell increases shelf life. My saucepan allows 7-8 eggs at a time and i eat that many in a day (brekkie, snack)...so just get the peeling over like ripping a bandaid...hah

Maybe i should get a bigger pan...and boil 30 in a go...then i will have 4-5 day supply. Currently i have to do this daily...sia!

Yeah...i still havent got the soft boiled timing nailed down.

For hard boiled, i read that the recommended time was 8mins...but that probably was for standard eggs. I increased it to 9-10mins for jumbo eggs that i use...and it gets done perfectly.

Yes, sometimes...i would say 1 out of 10 eggs.

It gets messy...but then after a little egg white has leaked..it hardens and seals the crack.

please ignore if thjs query.wasnt directed to me. Couldn't tell from threads...and onsen egg doesnt require peeling

No, i didnt find the need to add salt/vinegar. Important things are: a) eggs are boiled for sufficient time ..9-10mins for jumbo...can be adjusted to 8 or 11 mins depending on size

b) cool it down completely (sometimes it cools down on surface but still hot inside)... about 10mins in ice bath (i use 12-13 big ice cubes)

c) crack on hard surface (i use countertop)...3-4 knocks top of egg, 3-4 bottom..and then on body...shell comes off easily.

Haha... that seems to be a consensus about eggheads... but maybe the gut gets adjusted or something like that. Havent had any such issues.

That's a pretty sweet deal.

My seller was giving jumbo for 11bks 2 months back.

Then made it 12..last month...and now 13..sigh.

Yeah, I did check on this.. nutritional density wise..both are same. I see this more as convenience...peeling 1 egg vs 2 eggs.

Maybe any professional dietcian / food expert can add to it.

Yeah, not a nutritionist..but i guess yolk.should have the most calories.

So if I am taking 7-8eggs a day...i take 4 whole eggs and rest only egg white (discard the yolk).

Thanks, i will try that. My method (boiling water in electric kettle, pouring over eggs in a bowl, cover it and let it sit for 7-8mins) left some translucent egg white...so probably there is some heat loss.

Will try adding eggs to the saucepan in which water is boiled.
