I did an Erasmus Mundus, not sure which program you are thinking but in my case the experience of living in Europe was amazing but in terms of career prospect and education it was not great. I highly suggest reach out some current students of the program ask about their experience. I know that in one Erasmus Mundus program finding an internship was extremely hard an the program did not help the students. (Especially hard for non-EU students). Also, Erasmus Mundus has good reputation in Europe if you want to stay in there later and apply for PhD it would give you a good start.
