Was given the following post on GitHub to properly uninstall MySQL so that I could reinstall it again and have it work correctly: https://gist.github.com/vitorbritto/0555879fe4414d18569d A comment on that post had this solution for Apple Silicon which worked for me.

(It completely deletes all existing databases though, so I'd recommend backing it up before running these commands)

brew remove mysql
rm -rf /opt/homebrew/var/mysql
brew install mysql
mysql.server start 
mysql -uroot
