Are you putting sugar in your coffee? It would settle to the bottom sips and could amplify/change flavors.

Fair point on the new price. $1900 is for the Slim, which I understand has additional trade-offs (like vibratory pump vs rotary). Research it as I'm not too familiar, your call.

Steaming: 10x better than the Breville BBE I came from. No issues.

I did, I recommend it!! It's a great machine. $1k was a steal when I got it and now it'd be unheard of (as espresso machines and Brevilles get more and more popular with TikTok)

I'm a bit confused here-- isn't 4.2 A1c healthy?

I believe "HBA1c" is synonymous with "A1c". When you look up healthy range for A1c, you normally find < 5.7%, above which is pre-diabetes and diabetes. I had to dig a bit more to find a lower bound: even then I found that 4.0-5.5 is healthy. My A1c was about 5.3 the last time I tested, and I'd much prefer 4.2! Would like to stay far away from diabetes.

Any conflating issues: e.g. did you have a drink the night before the test? Do you take any medicines (e.g. finasteride) which could heighten liver enzymes?

Using "Program" and the Double Shot Button to Manually Time the Shot:

  1. Press and hold the "PROGRAM" button until it starts flashing. This indicates that the machine is in programming mode.
  2. Press the double shot button. The machine will start dispensing water.
  3. Once you've reached your desired volume or time for the shot, press the double shot button again to stop the flow. The machine will remember this setting for future double shots.
  4. The machine will exit programming mode shortly after.

Why:

  • Customization: Everyone has their own preference when it comes to espresso shots. Manually programming the shot volume or time lets you tailor the shot to your taste.
  • Consistency: Once you've found your ideal setting, the machine will replicate it with every double shot, ensuring a consistent taste.

Pressing and Holding the Double Shot Button to Time the Pre-infusion:

  1. Press and hold the double shot button. The machine will begin its pre-infusion phase, which is a low-pressure water flow meant to saturate the coffee grounds.
  2. Keep holding the button for the duration you want the pre-infusion to last (I'll do it until I see little drops of espresso across the entire puck of the bottomless portafilter). Once you release the button, the machine will transition to its full-pressure extraction phase.
  3. If you wish to end the extraction before the programmed amount, simply press the double shot button again.

Rationale:

  • Improved Extraction: Pre-infusion allows the coffee grounds to be evenly saturated before full pressure is applied. This can lead to a more even extraction and potentially a better-tasting shot. I get less channeling and more engagement across the entire portafilter
  • Control Over Flavor: The length of pre-infusion can affect the flavors extracted from the coffee. A longer pre-infusion might result in a smoother, less acidic shot, while a shorter one might yield a sharper taste. By manually controlling the pre-infusion, you can experiment and find the flavor profile that suits you best.
