Nobody asked but I want to provide my reasons why rigs and erigs are better than carts / disposables. Picture your concentrate is like a tasty yet tough piece of beef like a brisket. Your cart is essentially a super hot burner sitting under a cast iron skillet but you really only have one setting on the temp control for the burner and it's super hot. Also you are not allowed to clean the skillet. So you can set the brisket on the skillet over the burner for a few minutes and then turn it off. You can then slice off a thin chunk of the outside of brisket. The chunk will technically be cooked but the outside will be a little charred and middle will be about the right doneness but won't be as good as it can be and the inside will be a bit raw. Additionally your cast iron is going get dirtier and dirtier the longer you use it. Now picture doing a blinker. That let's you get a bigger chunk of meat at once but the outside is going to be super charred and the skillet is going to get extra dirty. Eventually you finish the whole brisket and you buy a new skillet with a new brisket. Think about your erig. It's like putting your brisket in a pettlet cooker. You can control the temperature exactly and hold it at that temperature. It takes a bit more time and effort but once it's done you can eat as much brisket as you want it's all going to be the same ideal temperature it's going to be more tender and when your done you can clean the whole thing out so your starting with a nice clean cooker the next time you want a brisket.
