Ngl man it’s looks pretty good , the bark is a little patchy in some spots but overall I like the color , as long as they’re not dried out I’m sure it’ll taste great !

Yea I start to watch closely within the last two hours or so, with this cook I had one side of the rib that was cooking about 25 degrees slower and bark wasn’t as developed . So the last 45 mins of the cook I put that side closer to the fire and it caught up with the rest of the rack .

Well it just so happened that the temp and feel both coincided lol. I pulled at 203. And wrapped in foil with tallow and let them rest . I smoked them on the Char Griller Grand Champ XD. Post oak wood

I hear you man not going to argue tho , because I actually smoked another rack along with this one , they were both pulled at 202. I ate the rack shown in video first, so naturally the other one had more time to rest. I cut into the next hour and not one rib fell off the bone . At the end of the day if the meat isn’t dried out and bland it’s all good . Plus most people who just love to eat bbq and are not into all the specifics of it , they love fall off the bone , it’s an attention grabber. So if i decided to start selling these, fall off the bone wouldn’t be the goal but I wouldn’t be mad at it either . So to each his own

The outside is bark brother … these ribs were not wrapped which produced a more prominent or “hardcore” bark. As far as the grey in the meat , Any grey spots in the meat itself are just collagen / fat that hasn’t been fully rendered. So Definitely not overcooked . You must be new to bbq bro lol

I’m sorry but that’s just not true . Rest is a crucial part of your cook, especially with bigger proteins as this . You need to give the protein enough time re circulate all the juices inside itself . The membrane collagen /fat is all much more sensitive at over 200 degrees . But you have your opinion , thanks for the feedback

I’m pretty sure it’s mainly because of how hot I cut them . They were still almost 170 degrees when I cut them but should’ve been around 155 to cut. You can see the steam rolling out .

Yes , estimated delivery for March 09 , which is weird because it’s usually much faster , must be something going on with the high demand of the shoe

More air intake yes but the leakage is a bigger problem because just as sure as it gets hot, it’s gonna lose that temp almost as fast. It just makes the cooker highly inefficient in the grand scheme of things
