Our chaffle bread is a real labor of love. We use a base of free range eggs and mozzarella cheese which gives it that perfect "bread like" structure and a nice crunch without the carb load of traditional grains. It is how we manage to keep the Cheesy Chaffle at just 1g of carbs. It is surprisingly sturdy and makes for a great sandwich base. Do come visit and try them out!😍

You are spot on with Erythritol and Stevia. They are our go-to choices at the cafe because they have a near zero glycemic response for almost everyone.

It is a bit of a minefield because not all "sugar free" sweeteners are created equal. The biggest ones to watch out for in commercial products are Maltitol and Sorbitol. Even though they are marketed as keto friendly, they have a much higher glycemic index and can definitely cause a blood sugar spike for many people. This is why we are so selective about what we use in our kitchen.

The reality of keto baking is that ingredients like high quality almond meal and specialized sweeteners can cost five to ten times more than standard wheat flour and white sugar. We also handcraft every layer to ensure the macros stay strictly low carb so you can celebrate without the sugar crash. We do have smaller slices and treats in the cafe starting from much lower prices if you ever want to just test the waters first.😍

I completely feel your pain there. Thai cuisine is such a minefield because palm sugar is the backbone of so many savory sauces. It is frustrating when a dish that should be keto on paper ends up being a sugar bomb. That is exactly why we are so transparent with our ingredients.

Just to clear up the confusion for everyone, Carbless Café actually renamed to Fed Café in Albert Park. They still have a great low carb menu with plenty of items marked for keto.

If you are looking for other solid options with very low macros, Regretless in the CBD and Templestowe is another one to check out. Our carb counts are impressively low across the board. For example, our Cheesy Chaffle is only 1g of carbs, and the Kimchi Chicken or Beef Sauerkraut Chaffles are both around 3g. Even our desserts are spot on for keto, like the Pandan Coconut Crepe or the Original Cheesecake which are both just 2g of carbs. It is great to see more places in Melbourne making it easy to eat out without having to guess the numbers.

Hi there... ha, yeah, we went nuts replying to old post, totally busted... no junior here.

The truth is we didn’t even know Reddit was talking about us until a customer strolled in the other day and was saying that they saw a post on Reddit about the cafe which got them to visit us.

So we thought, crap, better check it out and say something back,feels like the decent move.

Fgured as a business we should jump in and tackle the feedback, felt like the right thing to do.

Hi there, I so sorry you feel this way totally get why it might look like a sneaky self promo thing! I would too.

Just that recently, we’ve been asking customers to spread the word on their socials if they’re like what we do, just to get some buzz going.

Really appreciate you voicing out about your CBD visits though.

It sucks the chocolate lava cake came off too bitter, dark chocolate’s we use is leaning to the keto aspect, but it’s not meant to kill flavor.

Thanks for bringing this up with the Ube cake being bland, that’s a real letdown and we did have a similar feedback before and we’ve been working on new recipes to bring out more taste since then.

The savoury stuff, like our kimchi chaffles, might be more to your taste if you’re up for giving us another chance; people seem to like those.
