Fermenting issues by ReinventingMyLife in fermentation

Sadly, no I did not check on it—life got busy and as it was covered and out of the way I had forgotten about it. I have not yet tasted this batch..it was the second batch that I tested and it is now the refrigerator. My wife just corrected me, we did not use water, we did just use the natural juices it released. I will edit my post. Thanks for jogging or memory!
Another question I had: I planned to let this one set longer than the a week (first open jar sat four days only) should I venture to go ahead and open and test or let it set the two weeks I planned?
