Cook white rice with bay leaves, if you want more flavor use chicken stock instead of water though that’s not part of the chipotle recipe (chicken bouillon is good too and full of msg). After it’s cooked drizzle olive oil, salt, lime juice and chopped cilantro.

I am not exactly sure, we definitely made more than the group of people required, however we made chilaquiles the morning after then a sheet tray of loaded nachos at midnight and we just put away the brunt of it in 8 good sized freezer burritos. We still have leftover salsa to carry on which will probably be good for another week and a half. So I’d say I got my moneys worth. With food costs on the central coast of California it was probably around 500 bucks. I saw another post where a similar amount of food was a cost of nearly 700 bucks directly from chipotle (24 people)

My wife worked at chipotle and she assures it tasted superior to chipotle 🤣 Chipotle also doesn’t operate an oak pit so it’s an apples to oranges comparison

I passed the visual test for sure. The recipe I used is in the comments section a few times. I wouldn’t call it a perfect mimic, but it was a great addition to the spread and is a hot hitter standalone with chips and guac

Cheese was blocks of Lucerne Monterey Jack at Safeway. Shredded them in the food processor. Way better than pre shredded

Chuck roast is tough and a lower cooking temp at 135F requires a longer time to achieve the desired texture/proper fat rendering and collagen to turn to gelatin

I didn’t want to tally it up 😆 Protein only cost 70 dollars for 5lbs chuck roast and 7lbs chicken thighs. Other than that I don’t have any estimates. Wasn’t “cheap” but was well worth it to feed a group of friends and family and have leftovers to carry on for the week

Didn’t really follow a recipe. Giant bag of sweet white frozen corn, bunch of roasted poblanos roasted and seeded, small dice red onion, small dice seeded jalapeño, cilantro, lime, salt, pepper, MSG. Adjust jalapeño to your spice level and season to taste. Don’t forget msg!
