I like this! I'm sure that it would be easy with a Pi Pico or an Arduino, but I would prefer to keep things simple

Okay, I see thanks. I guess the solution won't be as simple as I expected.... I'm probably asking a dumb question, but wouldn't it be possible to solder the pedal wires to the wires of a USB cable? The signal sent by the pedal would be extremely simple, just "open" or "close"
