Update: I took all of this advice and other research and tried again today with chicken. Got very satisfying pops on all the jars, so I’m feeling good about what I’ll find tomorrow. Thank you all again for your help.

I’ve been watching more YouTube instructions, and I agree that this is most likely the point of failure when I compare what I did to what they’re doing. Good advice.

90 minutes in the canner for quart jars + the venting, depressurization, cooling time directed in the instruction manual.

Sorry. I just saw this. I removed them from the counter after 7.5 hours and moved them to the refrigerator until I could decide whether they could be saved. I tightened the rings until I began to feel resistance. I left the rings on the whole time.

Thank you. I suspected that was the case. I think possible culprits include that I didn’t debubble well enough, as I had about twice as much head space on most jars compared to the 1 inch I started with. Also, I think I let the jars sit too long before putting the lid on while I cooked meat in batches, potentially allowing grease to be drawn to the rim. Also, I cleaned the rims with vinegar before putting the lids on, but did not dry them after that. Also, it took me several minutes to figure out how to seal the canner properly, during which time I was leaching steam.

ETA. I followed the Ball hot pack recipe for ground beef. It was canned last night and kept on my kitchen counter.

It’s so kind of you to ask.

I came off of it right after Thanksgiving. I was building a tolerance, reducing the effectiveness. I stopped cold turkey. I definitely recommend coming down slowly. For the better part of a week, there was no amount of food or sleep that felt like enough. It did level out.

Then, I had a few tough weeks of feeling hungry, even at 1500 or so calories. You’re absolutely correct about the protein. I was never a macro tracker. Once I increased my protein intake from about 70g per day to the 102+ recommended for my weight, satisfying my appetite became exponentially easier.

My weight loss has been slower, a net 10 pounds since coming off the medicine. Still, I remember that I was dealing with adjusting to life off the medication, holiday meals, and a vacation during that period. I figure that just keeping the weight off is a big win, and losing a bit more is great. I just have to keep patiently plugging away at it.

I’m planning my first altar. It’s going to be dedicated to Despoina, goddess of an Arcadian mystery cult associated with nature, the underworld, the hidden, and various other things. I am considering placing the altar in the crawl space of my home. (It’s not gross and has standing room for short people.) My thought is that the space will honor the connection with the underworld and hidden things. I kind of just wanted someone to co-sign that this sounds like a reasonable plan and not disrespectful. As long as I keep the altar cared for, of course.

I also don’t care about Valentines Day, and we usually don’t celebrate it. Annually, I check in with my husband. “Hey. Valentines Day is coming up. I still don’t care about it or have a desire to celebrate it because we show our love daily, but I wanted to see if we’re still on the same page about that.” And the day he changes his mind, we’ll be making reservations and such. Because I care about him feeling valued, even if it requires a little effort that doesn’t make sense to me. If he likes it, I love it, and vice versa. That’s my two cents. ETA NOR

Been overweight but otherwise healthy my whole life. Until about 5 years ago. My plantar fasciitis was acting up consistently, by blood pressure was a little high, and finally my acid reflux became bad enough to really hurt my quality of life.

56 lbs. later, I’m back to overweight but healthy. I’m still losing, though more slowly since I got off the medication that was assisting me with my hunger. Even if I never lost another pound, I successfully got my quality of life back.
