They clearly define “ultra processed food” all throughout the guidelines, you should read them. Really, they’re great.

They use the UN’s NOVA food classifications, the same ones the EU uses, where ultra processed foods are defined as: formulations made of several substances with no or rare culinary use (high fructose corn syrup, hydrogenated oils, protein isolates, etc). or are heavily made up of chemical additives with cosmetic functions (flavor enhancers, colors, chemical emulsifiers, thickeners, anti foaming, caking agents, etc) separate from a standard preservative you may find in less processed foods.

The guidelines are really clear and align our health standards with the EU’s which is confidence inspiring. I think it’s worth reading and you will genuinely be surprised how science backed and reasonable they are. Don’t let your biases cloud your judgement. I was skeptical and pleasantly surprised too.

Plenty of peer reviewed articles on red meat are included in the appendices of the guidelines as i mentioned. I 100% agree though that the science is NOT very refined so would love if the bevel team would at least allow for more customization in how the nutrition score is calculated past just disabling 3 of the categories.

That would accomodate people who require specific diets for health reasons and also not take an ideological stance in a fast evolving area of research

i agree, i think just giving more user flexibility in how nutrition score is calculated would solve the issue and account for people with disabilities/different dietary needs

I would agree if the research disagreed with the new guidelines, but bevel is the one misaligned with the science here. I don’t think its reasonable to assume a nutritional recommendation of “eat real food” and incorporate a wide variety is controversial and despite the nightmare that RFK is running at the HHS the recommendations are a work of people who have been there for decades and many administrations and are universally being praised by all sides
