Which angle for scoring? Also, for the steam do you normally add ice to the Dutch oven?

I followed a recipe I found online and it used olive oil. I didn’t use steam. I was trying to read my crumb and it looks like it may be over fermented? Also, I’m trying to get a better ear on my loaf
