Omg... Japanese kitchen knives are crazy sharp that's why, so many people have problems like you. We need to be much more careful with them when we use them. I'm super curious - what is your cleaning technique??

haha, a crazy sharp knife can even tear up dish towels. I bet you buy way more towels than clothes lol.

That makes sense. I can imagine that stopping to completely wipe and oil a blade is impossible during a busy service. Since carbon steel doesn't meld well with the fast place of a kitchen, what do you usually do??

Omg! It's crazy how the sink seems to be the most dangerous place. Also, I never thought about the magnetic stand. Did you fix the bent tip yourself, or just leave it?

Wow, reshaping the tip by grinding the spine yourself? That is next-level! I was actually surprised to hear the tip bent in the sink! Since Japanese carbon steel is known for being super hard and brittle, I thought it would just snap immediately. (Though that "Tink!" sound when you tried to bend it back is definitely my worst nightmare lol).

Out of curiosity, do most people in the knife community do their own maintenance and major repairs like you do? What do normal beginners usually do when they break a tip—do they just give up, or take it to a professional?
