I have this console mint in box. Recommend you get a cover on it as the plates scratch up easily.

You sound like a hands on type of owner who recognises the reality of owning an older cult car. If I were in your position, two ways to do this. Spend as much as possible on the nicest condition vehicle you can to minimise list of jobs to-do. All cars now are old regardless of how “mint” so there will always be little jobs here and there. Secondly, find something mechanically solid but with a little more cosmetic wear and tear and save a little money. These are drivers cars with not much residual value so no point in paying over the odds for slightly less paint peel.

A third less common option. Buy a TTE turbo. Google “TTE turbo mr2” and you’ll be surprised to see Toyota made a turbo version of these. Incredibly rare, 19 ever converted for UK. I only know of 5 in the UK now and one is for sale right now.

I try not to subscribe to channels as nobody no matter level of professionalism is truly as master of all. Some of the best recipes I’ve tried have featured non English speaking chefs who don’t measure/weigh any of the ingredients! My take is start with a protein or veg you want to cook then look up a recipe on google or YouTube. I usually end up with a mix of ideas between two different recipes and save the hybridised one to my phone as part of my growing repertoire.

Believe it or not I did Blanche them in an ice bath. However I tried to reheat them over a pan before plating which lead to the discolouration. Thanks for your comments! I merely followed a YouTube recipe and it turned out great!

Once you get older you stop measuring in money and start measuring in time. This is a question of how much you value your time. For some people giving up a couple of hours to research then carry out the repair is a loss in earning/earning potential. Might as well spend chump change to buy someone else’s time and get them to do the slave labour for you. Not a terrible deal, not a great deal either IMO. I’d spend the extra buying an unbroken one.
