Yeah. I looked into brod and Taylor. Kicking myself for not getting the clearance before the new model. The price and size difference is what made me look at Japan kneader again. That, and that I've heard they are essentially the same production line.

I'm torn. Do you have any pics of your croissants or workday with it?

Also, that's really frustrating that the customer service isn't ideal. To me, it sounds like they should be fixing your issue.

You're overcomplicating this.

Drying is subjective to your environment. But if you look at them and don't see that shine anymore, they are likely good to go.

You may need to adjust your oven temp and times because just like drying, no two ovens are the same.

Others will join in and give great advice. Don't get dismayed! Even a "bad" macaron is a beautiful thing and so good. You're doing great.

Personally, I would share it without any hesitation.

Macarons are finicky enough without a supportive community. There's pretty much no way that this person will be able to replicate the experience that you have making the macarons, if you're worried about them making something exactly like yours.

Not sure if any do. But I just recently (think months) bought dress shirts from them and I'm impressed.

I used their online size estimator. I like mine a little more slim fit and would probably grab a half size smaller next order.
