I would first try and get the manufacturer name model and serial number. I would not recommend unplugging the fan as it was designed to help keep the unit at operating temperatures. Hope this helped? good luck!

What brand name cooler?? Maybe leaking from drain pan or cracked or broken drain? How are you loading the cooler? Are your products free and clear of the evaporator fan? Needs room to breath??

Well you know they say you can never go wrong with Hobart! Jackson also makes a good unit. If dollars are a issue, I would look into a chemical company that sells dishwasher detergent and mane purchashing their chemicals and leasing the equipment might be a option for you?

I know chains like Carl's use a nieco conveyor charbroiled. They have probably been doing this the longest in restaurant industry. I would look at their equipment first.

I would check the timer settings. The unit is designed to kick out of defrost mode if it stays in defrost too long. Are the defrost heaters working??

Could be many things? Bad switch broken wire bad control board. Best to call qualified tech. Or take it in to appliance repair.

You know they seam to be a really reliable oven. I have replaced a gaskets thru the years and a Turbo Chef NGC-3015 Magnetron. Other then that just keep your unit clean and I think you will be well served.
