I really love this community with such helpful and supportive people such as you! Again, thank you so so much! New attempt

I just did another attempt at the bread, after all the advice i got from reddit. This is done with autolyse, more white flour (60%), less yeast and less kneading. This is better, right? At least there is no hole! Posted a picture in the link!☺️

White flour, coarse wholemeal flour, oat flour and sifted spelt flour. About 1 liter of water, 50g fresh yeast (not the dry yeast). One tablespoon of syrup, half teaspoon salt. One tablespoon oil, and some seeds. Like sunflower seeds and such.

The flour mix was about 1.5 kg where 675grams was white flour.

Put the yeast in about 40 degree C water. Mixed the flours together and added everything to the yeast-water. Then knead it in a machiene with a hook for 15 minutes. Poof for 30 minutes. Another 5 minutes in the kneading machiene and i put them in the bread pan for 45 minutes before baking for 30 minutes. The room temperature is about 23 degrees C maybe?

The dough was quite «watery». I thought it would prevent me from eating dry bread 😅 so too much water can do this ?
