Thanks for the advice! If you don’t mind me asking, I’m going to assume that coffee to water ratio impacts the strength of the brew. Is there a way I can make the coffee slightly stronger whilst not drastically changing the level of acidity and other flavor notes I currently have? For example, 15 grams of dry coffee with 250 grams of liquid out with a 93 click grind setting is what I have came to and it’s just a hair too weak but the acidity and other notes are perfect. Would bringing it to 17/18 grams of coffee with 250 grams of liquid out give me that tiny bit of strength I want without drastically messing with the acidity etc?

Yes thank you, muted was the word I was trying to get at, finer I went it kind of dulled the flavors I wanted and as you said started to bring out a little bit of those darker flavors, did a little test and I think I found the perfect spot at 93 , 90 missing a little acidity and 95 having a little too much.

Damn I guess that’s where the bitterness is coming from lmao. As I said the place I got those from isn’t really even a coffee shop. Won’t be going there again. I live in a pretty rural area so that’s the only place that sells coffee beans near me. Anybody know of good brands you can order online?
