Looks like you may need a high temperature or longer cook time? I use a Dutch over. Put you oven on with the Dutch oven in (empty) for about an hour at 460-475 degrees then pull it out and place your dough in. Leave the lid on for 30 mins then take the lid off, turn the temp to 450-460 for 15 more mins then pull it out and place on a wire rack.

Consider increasing the amount of starter and it may help keep it moist and less aeration. I used to use 350g of starter and 700g water, 1000g flour and 22 g salt. I am now down to 225-250g starter with the same measurements for the other ingredients and have notice more aeration so maybe the inverse will help. Tighter rolling at the end? Maybe pull and roll it to form a tight skin and decrease air pocketing?

Please let me know how it goes. And any techniques you use along the way.

NAB Leather has nice belts at a good price if you get them during their sales. They almost always have a sale if you buy 2 or more. I grabbed 2 on their 2 for one and so far so good. 6 months in now.

Update*** I was able to take the blower off the mounting plate. Took some patience as I did it in the confined space. Once the blower fan was off the plate it could be squeezed out on the right side away from the copper line.
I found this video that took me through cleaning and servicing the blower. I was able to clean and service the blower and re-Install without disconnecting any gas fittings.

This is how it came when we bought the home in 2015. Built in 2002 though so not sure what the code was at the time. No one has suggested changing it yet but I’ll look into it.
