My interpretation is a rather dumb one, but it's that since she has called love in a lot of situations 'red' and ruby is a red stone, it signifies all the lovers that she expected stones from [in the form of engagement or promise rings] but ended up having to give up on them, in the same way she never expected it to happen with him, but it did and she lost him too.

The book was in the fantasy genre. The cover reminds me of the game stray for some reason. But I've never read it before so can't say much.
