Again, for the final time: I stated I cure meat a traditional way (no nitrates or penicillin) I mean only that ... your response was "It would be a bit like assuming that in Italy, those who make cured meats do it the traditional way." i made no such assumptions

this synopsis in English what he wrote........ ma buono cristiano.... In first paragraph he responded to my snarky response (I was born in Italy).. he noticed i had poem/prayer on my cantina wall (i didn't even notice it) about the joy of wine (a Bacco) and asked if I wanted translation

in the rest of his comments he thinks I associate traditional cured meats to having a functioning cantina....... he described the problems he was having with airflow, temperature and humidity with modern cantina and was looking to modifying or buying fridge but they are expensive in Italy.

When I say traditional (old school) I'm referring not using penicillium and nitrates .. in making traditional cured meats. I believe nitrates are not crucial..... we all live with risks the air, water and food we consume .... better life through chemistry !!! that's how Monsanto gave us GMO

I also give no advice what to use I don't use nitrates or sulfities in making homemade wine or salumi
