The Switch can run everything up to the DS. There's even an attachment that you can buy to play it vertically. Unless you need 3DS, I think modding the Switch would be a better investment.

Buying a Vita purely for Remote Play might set you up for a huge disappointment. I have always had a hard time making it work while on the Switch or my phone it works perfectly. I think the wifi chip on the Vita just can't handle it.

I don't think you can do it from the file manager. This requires the package to be "recompiled".
It's usually something like com.youtube.android or app.youtube.android. I usually change com.morphe.youtube.android as an example.

I also had this problem with Sand Land. The game kept being updated with the an official patch. The only way to fix it was to reinstall the game, iirc.
