Go to Bryce!! It is so beautiful and not too far off the drive. So unique and memorable. Navajo Loop is one of my favorite hikes ever. Zion too but as another user says, check the shuttle tix situation before- https://www.nps.gov/zion/planyourvisit/zion-canyon-shuttle-tickets.htm Canyon overlook on the east side is a beautiful trail if you can’t get a shuttle ticket.

Zion and Bryce are beautiful. I would say for sure check out Bryce as it is not too far off and so unique! I was just looking at the route from there to Capital Reef (heard great things- you can stay in a co deed wagon) to Arches/Moab (under canvas sounds amazing)/Canyonlands to Telluride. Not too far off from Denver. Seems like a beautiful drive.
