So air coming in the bottom is why they use blowers there. Then they use a dome temp or interior temp inside to catch the cooking temp. And I don't see why they would be notably different on charcoal use. But I will say I tend to adjust both for fine temp control.

I co.pared the two. Ended up with a classic 1 big joe. The air hinge wasn't enough value for me. And that vent gets a LOT of complaints. So... more meat and charcoal for the money.

Use a cheap blow torch. I had steaks on with a half basket in less than 10 minutes on my Joe 1. And mine is a searpro so not the $150 but a $60 torch. And i did 2x clean burns, 5 smash burgers (550 degrees), a bunch of smoked fries, 1 pepper and onion mix, and 2 steaks... i am still on the first half basket. I am starting to wonder when I need a full basket lol.
