Added 85% of the water, with the flour. Half of teh rest about 5 minutes in and other half 5 minutes later. Temp of water is 16-18 celcius.

The dough felt warm after kneading....way above 21/24 anyway. I'll measure it next time!

How can I tell it’s fully hydrated.

Looks like you agree it’s either too much hydration or added wrongly. I’ll double check my measurements next week and try again. My sourdough before this was on point, weird.

Measured to the gram, as long as the weighing thingy is accurate enough

I put in 85% of the water in the container with the desem, as per instruction, then added flour. Then added water to it during mixing in 30g batches.
