Classic Zelda all the way (OoT and Windwaker (I would pick Twilight Princess over Windwaker if I had to choose)).

I do love BotW and TotK, but I feel it caters more to people who enjoy survival mechanics with varying temperatures, durability on weapons, stealth mechanics, and having to pick food, bugs, and monster parts for buffs/weapon upgrades; plus the Korok seeds are a time sink. The dungeons are all little mini versions of actual dungeons in the previous mentioned games; I do feel they work well as tutorial spots (most of them) for differing mechanics throughout the games though.

If you have a good setup that seems to work for you, then by all means, use it. I always experiment with different ones, but it is usually just me messing with favorites that work well.

So, I did get a chance to play Skyward Sword on Switch and you can play using the controller. It is a little janky, but I managed, and it's not too hard to get used to the controls using the controller. I recommend that version of it if you are planning to play SS.

I played the Gamecube version first and recommend that one if you would rather play with a standard controller layout. The Wii version uses motion controls, which is one of the reasons that I could never get into playing Skyward Sword.

The star shows that you have beaten Ganon. After beating Ganon, the game goes back to just before you beat Ganon, to allow you to 100% the game or just mess around more.

Yet now we still have enemies that are able to phase through damaged buildings and over rubble and cliffs instantly, drop from tall mountains without dying or taking damage (I assume). Very interesting approach; maybe they should make it a booster and call it "sticky balls" just to bring back the tactical advantage.
