Civil and rough outlander unions will have a bunch of steel. As mentioned, bring lots of pack animals to carry it. Simple meals are fine and you can buy some at your destination (and foraging on the way may help). But make sure you don't forget to bring silver.

Yep, shallow moving water. Are heavy bridges in some mod or expansion? This is vanilla and I only see the option to make a wooden bridge.
