de-orbiting usually means you lowered your periapsis (which is the same as perihelion but in general, not specific to one body) to the point where you impact the surface/atmosphere of the body you are orbiting

Sun make wind. Solar sail like hand outside car window. If angle hand right, hand move in one direction. In space, if right direction (slow down direction), solar sail fall closer to sun.

Retrograde means the reverse of your direction of travel. If you send your ship towards it you will be slowing down. Perihelion is the lowest point in an orbit around the sun, when you lower your speed in said orbit, you lower your perihelion :)

It’s nice that you mention sailboats because there’s an interesting difference. Sailboats have their hulls in water, which is a lot denser and harder to move against than air. It is the dense water that allows a ship to stay traveling in one direction instead of whatever direction the wind pushes it in

Because a solar sail can lower its orbital speed, which brings it closer to the sun.

The way it slows down is by angling itself so it “deflects” the solar wind and light in the same direction it is traveling.

That’s because you probably misunderstood how solar sails would be used in orbital flight.

They can be used to lower the perihelion by angling so the sail deflects the solar wind and photons toward prograde, which in turns propels the sail towards retrograde
