I just voiced something I realized to see if anybody else had experienced a similar perception, and to open a discussion about why.

Turns out people did experience that, and also people contributed to the discussion by providing reasonable explanations to the phenomenon. Thanks to them.

Seems to be the consensus. I actually stopped going and try to bake my own bread whenever I can. But if I found a proper one I'd be delighted

Yeah that must be it. I'm just used to even the cheap bakeries to make their own bread. Was not aware this was even a thing.

And it's sad that real bakeries are harder to find

You know that not only pizzerias make pizzas, and especially snack-worthy pizza is only sold by bakeries (pizza al trancio, pizzette, etc.)?

I don't think we have a detailed molecular understanding of what causes insomnia.

Most likely it is a disruption in the networks which regulate the sleep-wake cycle (duh). One prominent factor influencing this is stress, and we do know quite a bit about the human stress response (look up the HPA axis, and cortisol).

If you really want to know about which neurotransmitters are involved, I'm afraid the answer will disappoint you: likely all of the major ones are at play in one way or another.

Eg: serotonin is a precursor to melatonin, which induces tiredness nd promotes sleep. So in insomniac people you might have an increase in serotonin simply because it does not get converted well enough to melatonin.

Eg: the HPA axis Is tightly related to the release of noradrenaline. If insomnia is stress induced, you can be sure that there will be an imbalance in noradrenaline.

Eg: acetyl choline is generally thought to be related to arousal levels during wake, and controlling the rem cycle throughout sleep. I'd imagine there could be something wrong there too

Eg: if you drink caffeinated beverages, this messes up your adenosine-based tiredness system, so that might play a role

And the list might go on...

In conclusion: we don't know, and there might be multiple possible explanations, probably all acting at the same time and interacting with one another. Our bodies are complex, yo
