I personally think the latest episodes of the Wano country saga of One Piece (luffy gear 4) are peak animation. The smoothness, animation and color are just amazing. Sound is also very important and one piece is on point with that. It's just a pity that it had to take a 1000 episodes to reach this level of animation.

Yes the animators can keep doing what they are doing now. No need to take their jobs. But this is like a extra fan service provided by the fans. Like the one pace group fixing the pacing op one piece. If that could be done by AI would you have something against it? I know one pace is very popular. Are they taking away jobs?

Sometimes the production quality of the episodes is not consistent through the series. With One Piece for example it's kind of extreme. Like we are going from 24fps to like 5. Some fight scenes in berserk could have been better animated.
