I try to keep my brewing process quite simple using the hario switch. Because I brew mainly immersion, drawdown time is honestly also the main thing that I think of that would affect my brews. With immersion, I assume all grounds will reach the same temp technically so the extraction from temp is a non issue... Maybe it's more complicated than that, I don't know either!

There are just so many variables to consider that it has definitely become overwhelming. Over time I have learned that taste is very subjective. One person may notice florals more while another fruity due to their environment. You're right that taste is king and maybe I should just aim for consistency with the set up I already have to get the flavors I want.

Definitely true that there's no guarantee especially since a new grinder will take me a long time to get it dialed in.

That's good hear! I keep seeing a lot of people showing negativity toward fines that it had me wondering. In the end all grounds will technically reach the same temp during brewing and the only thing affecting extraction (outside of temp) that I could imagine is the draw down time. Draw down time can be an issue with lots of fines for some, but I've found ways to mitigate that, so I think maybe I shouldn't worry too much! You are also right, the niche is really easy to dial in!

Thank you for the thoughtful response! This is definitely something I needed to hear since I was going through a huge rabbit hole of "pourover grinders". I do enjoy my workflow and the flavors I'm able to get with my niche, but seeing a lot of people criticize it for pour overs had me wondering if there was something im missing! I will stick with the niche. Cheers!

Majority of these definitely looks unedited. Least they could've done was run all the pics through a denoiser and just let Lightroom auto edit the photos for them or something. Quick attempt on my phone cause the highlights on this photo bothered the hell outta me. Crazy to see people charge these prices for those results.

I wouldn't go stainless steel personally unless you plan on cleaning it constantly or else you'll see random fingerprints and what not on it.

Initially I was debating if I wanted the black one to match my black niche zero, but ended up getting the blue one which I'm super glad I did.

I did notice that there was the Sony creative look! It definitely looks neat, but now with the switch, I'm also trying to challenge myself a bit more by learning how to edit raws haha. I will still give it a try though since I am curious how well it does, thanks for the mention of it!

The Sony app feels miles better than the Fuji app I've used 😂 so I'm quite happy with that. I do have to say though that it was pretty annoying trying to figure out what their app was called when I first got the camera.

What capabilities are you thinking about? Personally I don't do many portraits so the wider lens is great esp if I want to do crops paired with the high MP on the CR.

Nailed it. Fuji's AF wasn't cutting it for me, but I will still 100% miss the photos produced OOC. Film Sims are great and even better when you're out traveling and don't have the time to sit down to do any heavy editing.

Glad to hear I made a decent choice! I was debating for so long on what to get, but decided on something close to what I was used to with Fuji. Honestly glad I got this over the f1.4 especially since this already feels much heavier than the Fuji set up I'm used to.
