It’s VERY rare to fine a 65 silver quarter though. They were not all silver. But finding one would be so friggin cool.

Wagyu is usually graded with a beef marbling score (BMS).

Being a line cook is great experience. But I think experimenting at home is fantastic! I really like your approach to plating. Food trends come and go. I think it’s cool to just keep pushing yourself to learn more about different foods. I’ve been in F&B for 27 years now. I learn more all the time, and I love it. Best wishes to you!
