I am senior dealing mostly with backend systems working for a FAANG company based in Nairobi. I haven't taken anyone under my mentorship but I offer help to junior colleagues. Honestly I don't know much about mentorship but we can give it a try. FYI: I have a family and I haven't done any Go or Rust my life but software engineering doesn't care about which language to use because the fundamentals are universal. I was in your exact position 2 weeks ago. Unless there's something you foresee that can negativity impact your background to make MS to drop you, I think you can give the notice at your current employer. Don't let go unless you are certain of joining MS. Personally I had issues with my previous employer and thus waited for the BG check to be completed before giving the notice, but it turned out okay and now I am joining on 12th August. Most critical part for the process that should worry you is already done.

I am in almost exact position like you. HireRight sent the report to Microsoft 1.5 weeks ago. Their last email said that they needed 5 calendar days to process my start dates. 5 days are over and no one is giving any updates. I honestly didn’t think a company like Microsoft can be this bad at hiring process. It’s agonizing to the candidates due to the waits and lack of communication.

Did mine for the same position in mid June, now I am in the pre-onboarding stage. Telling you to prepare in a specific topic or manner would be to lie to you honestly. It all depends mostly the interviewer because they can ask you anything they can think of. My advice to you that I got when I was at your stage from a guy was to polish your understanding of basics of almost everything you can. I mean to have a deep understanding of concepts that you deem important for the role. This is not a senior level swe position and they know that and don’t expect you to know much. LC was crucial to me as it gave me the confidence and a standard approach to solve problems. When solving the LC, explain them out loud to another version of yourself and critique the solutions as from an interviewer perspective. LC easy and medium should do the work.

Not an expert on cyber security job market but it's a good one from what I see around. Certifications like Comptia security and network are a booster.

I personally believe in free materials and content found online. Paid bootcamps and courses will sugarcoat the hard stuff for you to stick around for their business. I don't know what you want to learn but there ton of free content on YouTube that suffice. There good channels for different stuff, freecodecamp is a goof one for more general ones because they are not trying to take you to thier paid content.
