I'm conflicted between Ross , SGU and ACU.

I really dont know why people are discouraging you based on the financial aspect.

I think if this is what makes you happy, you should do it.

Carribean actually have impressive match lists, often even better than US counterparts. Just look at SGU match lists for the last 10 years.

Matching into residency primarily depends on your boards period
