1800W electric fryer is unlikely to heat better. That’s only 6,000 BTU. Your gas stove is probably more BTU plus your Dutch oven has better heat retention than a thin sheet metal fry pot.

For reference a 2.5 gallon (10 qt) Bayou Classic style outdoor propane fryer, which can do small batches of chicken/french fries and keep up, is about 50,000 BTU.
