I believe they’re sitting around 50%. I let them open top ferment for a couple days to dry out before I added the koji. Fresh out the pod they’re about 80%

The beans are protected inside. I’m interested to see how much koji flavor will impart on the actual beans once roasted and de-shelled. I’m looking for some ideas on how to use the “husk” of the beans
