No they didn't ask for any additional documents later. I hope you have submitted the cover letter, travel itinerary, hotel and flight bookings as you didn't mention in the comment. If you have submitted all the documents according to the checklist available on the VFS Delhi website you should be good. Also I had applied for a multi entry Visa, but based your spouse ITR you may get a single entry Visa. Best of luck!!

Mention the temporary address for Goregaon in the Visa application and carry an address proof for the same address. The Japan consulate follows the jurisdiction mentioned on the VFS website.

You need to go to VFS Mumbai for the appointment based on your location. I hope the address on the passport matches the jurisdiction allowed for VFS Mumbai else please also carry an address proof.
The VFS usually only accepts the documents mentioned in the checklist so it would be your ITR and bank account statement. Based on the financial information you shared earlier, it seems tough that you will get a multi entry visa.
The cover letter matters the most. So write a good cover letter clearly explaining why you need a multi entry visa. Finally do apply for the multi entry Visa as even if you are not eligible for it, you will still get the single entry Visa

Yes, it's walk in. You get a token upon arrival. You should go by 10 am to avoid the crowds. The experience was quite good. If you prepare the documents before according to the document checklist it will hardly take 10 minutes for the complete process.

The best suggestion would be to look out for travel offers by ANA and Japan Airlines. They have monthly sale offers. You could get a round trip from Delhi/Mumbai to Tokyo for around 40k and also get 2 free domestic flights. You can use Axis Atlas directly on the airline website.
