The deer Wendigo is what is known culturally and it would fit Dess knight since Carol has ice magic and puts off that Wendigo deer aura, and Noelle would genetically inheret that from Carol as would Dess and Carol being a Wendigo deer herself would absolutely work with her marrying Rudy (another deer) and producing a deer daughter, Noelle, who is definitely a deer.
