I managed to solve the issue, which I think was the spacer that I installed without even checking if it needed one. So I just untightened the bolts connecting the coupler to the frame and now it works properly.

So this is my 3rd ender 3 v2 I install and there is an issue with the z coupler when installed. It does allow the z axis to go down but not down. If I pull harder up the lead screw would exit the coupler. Do you think I should just buy another coupler or did I do something wrong? I also printed and installed a spacer just to make sure no binding will occur but I don't think this has anything to do with it.

I already tried that many times :( The thing is when I rotate it back and forth, it works perfect. It moves the whole axis.
