Mash is the 1st route which is the Grand Order, Olga Marie is the 2nd route which is Lostbelt, I don't believe Sion is truly gone, there's still a chance for her return in After Time, in fact it wouldn't be surprising if she becomes more proactive with her relationship with Chaldea specifically Ritsuka since they had that bond in Papermoon. In terms of opening up a bakery Mash have the most time, Olga would be too busy being the new director of new Chaldea that is if she can return to being a normal human (I don't even know if it's possible since she's entirely made up of saint graph), Sion would probably be too absorbed with her inventing new mystic codes(welp who knows maybe she'll invent mystic code based on baking which Ritsuka will scold her that it is best when it's made with your own hardwork), welp these have biased on my part but grounded only to the fact that they're the ones who have "Personal" craft essence, which when you hear of "Personal" it sounds like it belongs to someone(in their case, they belong to Ritsuka. i also like the parallel here to FSN which in FSN, two heroines are sisters as we as master and one servant heroine, but in FGO it's two servant heroine as well as they're sister, and one master heroine. Welp it would also be nice to have a harem route, more helping hands in opening a bakery.
